Cookies, a little treat that comes in so many variations. Do you like sweet? Do you like savory? Crunchy? Nutty? This is your cookie. Whether served on a plate or in a tin, they disappear. My MIL gave me this recipe after I raved when I first tried them. She said, “Oh, these are nothing special.” I beg to disagree, these cookies really are “Something Special!”
SOMETHING SPECIAL COOKIES

1 cup dark brown sugar, firmly packed
1 egg, slightly beaten
1 cup cooking oil
1 cup quick oats
1 cup corn chex cereal, crushed
3 ½ cups all purpose flour
1 tsp baking soda
1 tsp salt
1 tsp vanilla
½ cup flaked coconut
1 cup finely chopped pecans
In a large bowl, beat butter with sugars until well combined. Add egg and oil, mix well. Add oats, corn chex, flour, baking soda, salt and vanilla. Mix well. Add coconut and pecans. Roll into 1-inch balls and place on a lightly greased cookie sheet. Flatten balls. Bake at 350 degrees 10 to 14 minutes until light brown around the edges. Do not let them overbake to a dark brown. Makes 8 to 10 dozen.
Cook’s Note: The recipe says cook for only 10 minutes, but I never thought that was long enough. You may try 10 minutes and then cook more if you think it needs it.
