Grilled Tuna in Thirty Minutes or Less

This flavorful and healthy Mediterranean-inspired dish using kitchen staples can go from start to finish in under 30 minutes.  This version includes a taste-bud blast – Italian gremolata – a simple green condiment made from a combination of fresh parsley, garlic, and lemon zest.

This version also incorporates a nod to Moroccan cuisine with the addition of preserved lemon rind for a bit of extra flavor and visual interest. Preserved lemons take much more than 30 minutes, but are deliciously worth it when you have the time and versatile and last for months.

Although spending an afternoon making preserved lemons at home is a great investment in your kitchen flavors, but store bought will do in a pinch.

Grilled Tuna Steaks

Mediterranean Grilled Tuna Steak

Ingredients
  

Ingredients:

  • 4 6- oz. sushi-grade tuna steaks approximately 3/4” thick
  • 2 T. extra virgin olive oil
  • Mediterranean-spiced sea salt to taste*
  • Black pepper to taste
  • 2 large lemons cut in half

Gremolata:

  • ¼ c. fresh parsley leaves washed, dried thoroughly, and finely chopped
  • 1 t. organic lemon zest
  • 2 t. preserved lemon rind rinsed and finely chopped
  • 1 large clove garlic grated
  • Sea salt and black pepper to taste

Instructions
 

  • Clean and spray grates of a gas grill with non-stick cooking spray and set heat to high. Close lid until grill comes to temperature.
  • Meanwhile, prepare the gremolata by combining the parsley, lemon zest, preserved lemon rind, and garlic a small bowl. Season with salt and black pepper, to taste, and set aside.
  • Brush tuna steaks with olive oil and sprinkle with Mediterranean-spiced sea salt and black pepper, to taste.
  • Open grill and place tuna steaks and lemon halves over direct heat. Cook tuna for 2 minutes per side for rare. Increase time slightly for medium, but do not overcook.
  • Remove tuna and grilled lemon halves from heat and serve immediately topped with some gremolata. Serve with our grilled marinated asparagus or other side of your choice. Enjoy!

Grilled Marinated Asparagus with Gremolata

This grilled marinated asparagus is a quick and easy side dish enhanced by the addition of a simple, yet tasty, Italian gremolata. Traditionally, gremolata consists of just three ingredients - fresh parsley, garlic, and lemon zest – and is used to top meat, poultry, and seafood. Here, a bit of preserved lemon rind is added for an additional pop of flavor.

Ingredients
  

  • 1 lb. fresh asparagus trimmed
  • 1 T. extra virgin olive oil
  • 1 T. balsamic vinegar
  • t. Mediterranean-spiced sea salt*
  • Black pepper to taste
  • 2 whole lemons cut in half
  • Shaved Parmesan cheese to serve (optional)
  • ¼ c. fresh parsley leaves washed, dried thoroughly, and finely chopped
  • 1 t. organic lemon zest
  • 2 t. preserved lemon rind rinsed and finely chopped
  • 1 large clove garlic grated
  • Sea salt and black pepper to taste

Instructions
 

  • Place asparagus in a wide, shallow bowl and drizzle with olive oil and balsamic vinegar. Season with Mediterranean-spiced sea salt and black pepper, to taste. Gently toss to combine and set aside for 15-20 minutes to marinade.
  • Prepare the gremolata by combining all ingredients is a small bowl. Season with salt and black pepper, to taste, and set aside.
  • Spray grill grates with non-stick cooking spray and preheat grill to medium-high. Place asparagus and lemon halves over direct heat and grill for 3-4 minutes per side, or until they are crisp tender.
  • Remove from heat and transfer to a serving dish. Top with gremolata and serve immediately with grilled lemons for squeezing and shaved Parmesan cheese, if desired. Enjoy!

Notes

Tip: For easier turning (and to prevent asparagus from falling through the grill grates), thread two pre-soaked wooden skewers through several spears lined up side by side to hold them together.
